Caramel-for-turtles

by Diane (diney) This is a pic of my husband, Tom. He was rolling out caramel that my niece had purchased. (It was a little too hard, so it was microwaved then flattened!) The recipe is what I always use, so be don't let the rolling pin fool you into thinking this is hard caramel. It isn't! =0) Caramel for Turtles 2 cups sugar ½ cup butter 1¾ cup light Karo Syrup 2 cups cream pinch salt 1 tsp vanilla Cook first 4 ingredients to 232 degrees for dipping turtles or 245 degrees for plain. Add vanilla and salt. Pour into 9x13 pan that has been greased with butter. Cut in squares before too cool. (Don’t scrape pan into this mixture. It will be harder than the rest of the caramel. Prepare a plate with butter and put scraped caramel here. The last is from 2008 when he became one of the first train operators to get his license for Utah Transit Authority. He is now a supervisor and even works in the control room of the FrontRunner.
